Zero Waste Box Mixes

One of my favorite zero waste tips is to make my own baking mixes! All you need are a few jars and your favorite recipe. Simply mix together the dry ingredients, funnel them to a jar, label, and you are done! You can whip up a number of batches in just a few minutes, saving time and money! Cookie mix jars are also fantastic gifts.



Today I made up our favorite southern buttermilk hotcakes (pancake) recipe passed onto us by my mother-in-law. We make pancakes on holidays and some weekends, and having the dry ingredients already premeasured makes it much easier to say "do you want pancakes this morning?"


I will also be sharing some tips I've learned - so check those out below!



Buttermilk Pancake Recipe:

Dry Ingredients (to go in jars)

2 cups All Purpose Flour (we use organic)

1 tsp Baking Soda

1 tsp Salt

2 tbsp Sugar


Wet Ingredients (to mix in when making the pancakes)

2 tbsp Butter, melted

2 Eggs, slightly beaten

2 cups Buttermilk Buttermilk Substitute (mix 2 cups milk + 2 tbsp white vinegar together for 10 minutes, then add to recipe)


Directions: When you are ready to make the pancakes, mix the jar of dry ingredients with all of the wet ingredients. Do not overmix, small lumps are okay. Ladel into a greased frying pan on medium-low heat, forming puddles ~4 inches in diameter. Wait until small bubbles form and flip to cook for a minute on the other side. Serve with your favorite toppings! (Approximately 150 calories per two 4 inch pancakes)




Tips for adding dry ingredients into jars:


  1. Measure the baking soda, and then crumble it between your fingers as you add it to the mix. This ensure no clumps of soda in your pancakes!

2. Funnel your mix using a canning funnel, or a rolled up piece of paper



3. If your jar is a little too small, try "burping" your jar by patting the bottom of the jar against your flat palm (or the table). These are gentle pats, so the mix doesn't fly out. This action burps out the air trapped in the mix and makes significantly more room in the jar!!





4. Label your mix! If you don't have a label maker, scrap paper and tape work just as good. If you are gifting a mix (like cookies), make sure to include the full recipe and instructions for how to prepare it.




I like to make a number of these jars at one time- and with only 4 dry ingredients, it doesn't take long!


Try your favorite recipe out- and ditch the pre-made packages! This saves time, money and you have full control over what you are serving your family!
